Fatty acids are a long aliphatic hydrocarbons chain with a carboxylic acid attached its one end.

Fatty acids have one end CH3 and another end has -COOH group attached.

If fatty acids chain contains all single bonds between carbon atoms, then fatty acids are saturated and if double and triple bond present between carbon atoms in chain then fatty acids are unsaturated.

 

General formula of fatty acids is following,

CH3-(CH2)n-COOH

Where n is typically an even number between 12 and 22.

The fatty acids which contain C 14 to 20 are long chain fatty acids.

The fatty acids which contain C 22 or more are very long chain fatty acids.

Fatty acids may be classified into different categories,

1.According to the degree of unsaturation.

2.According to the chain length.

3.According to the position of H-atom.

4.Accoding to the body requirements.

Free fatty acids are prepared by hydrolysis of triglycerides.

Triglycerides ⟶ Diglyceride + Fatty acids ⟶Monoglycerides + Fatty acids

Explanation:

In normal condition single fatty acids are obtained. But when there is triglyceride hydrolysis is in heat and pressure then mixture of fatty acids are obtained.

So, we can say that both kinds of fatty acids are obtained single or mixture of fatty acids.
